The Casual Dining Issue
The third issue of Finesse - the Casual Dining issue - is all about sharing, particularly as it inspires the teams at Bouchon Bistro, Ad Hoc and Bouchon Bakery.
The stories examine some of Chef Keller's favorite elements of these causal concepts: the longevity of partnership with purveyors Keith Martin and Ingrid Bengis, the murals and vin de carafe program at the bistros, the fried chicken that helped put Ad Hoc on the map, and the quest for the perfect macaron.
Also in this issue Anthony Bourdain reveals what he looks for whenever he travels to Paris; Dana Cowin recounts her first memories eating yodels as a child; Michael Ruhlman shares his difficulty in choosing his favorite TKRG restaurant and Jacques Pepin describes his favorite childhood bistro memories.
